Soy Milk

Ingredients
150g whole soy beans, 150克黄豆
2lt water, 2升水
Salt or sugar (optional) 盐或糖(可选)

DIY Tips:
• Don’t take your eyes off the pot as it will bubble and overflow very quickly if you’re not careful.
• Instead of using salt or sugar to flavor your soy milk, try vanilla extract or high quality maple syrup.
• Okara (the bean pulp that’s left after you’ve strained the soy milk) can be used as a flour substitute in bread and cake recipes. Simply spread it evenly on a baking tray, heat in an oven on low for 15 to 20 minutes. Once it’s completely dry, give the okara a whiz in the blender then store in a dry place to use next time. Alternatively, add a cup of okara to your smoothie – you won’t even notice it’s there but your body will thank you for it.

Directions
1. Clean the soy beans by placing them under running water, ensuring any loose hulls have been washed away.
2. Put the clean soy beans in a mixing bowl, cover with water and leave to soak overnight (10 to 16 hours).
3. If you don’t like the beany flavor of fresh soy milk, place your soaked soy beans in the microwave and heat on high for two minutes. This step is optional.
4. Place the soaked soy beans and 1lt of water together in a blender and grind until it forms a slurry.
5. Put the slurry into a large pot and boil for ten minutes, stirring constantly. Lower the heat and let it simmer for another ten to 15 minutes. Keep stirring.
6. If you like flavored soy milk, now’s the time to add either salt or sugar.
7. Pour the mixture through a cheese cloth or mesh bag. We opted for a Japanese brand of mesh bag normally used for garbage disposal units – they have a handy elastic rim that you can stretch over the mouth of a jug. Just make sure your soy mixture has cooled for a few minutes, as you shouldn’t put anything over 120°C into this particular brand of bag.
8. You now have fresh, hot soy milk and soy bean pulp called okara.
9. Keep the soy milk refrigerated. It will stay fresh up to three days.
