Butter
Makes 1 tub (the amount of cream you use will result in an equal amount of butter)

Ingredients
1 tub double cream, room temperature

Directions
1. Pour the whipping cream into the blender.
2. Blend on high until the cream starts to form peaks (this is whipped cream). Turn the blender down to medium and keep blending.
3. You should start to see the cream separating into yellow clumps on the top and liquid at the bottom (this is butter milk).
4. Once the cream has separated into butter milk and butter, stop blending and leave to rest for a minute.
5. Drain the butter milk away.
6. You now need to wash the butter. Add some iced water to the butter and blend for one minute. Drain the water from the butter and repeat this process until the water comes away clear – this means there’s no more butter milk left.
7. Decant the butter into a bowl and use a cold wooden spoon and your hands (making sure they’re as cold as possible) to press out any remaining liquid.
8. If you’d like to salt or flavor the butter, do it now. Make sure you mix any additional ingredients evenly.
9. To shape the butter, place it onto a sheet of cling wrap and roll it into a log. Keep refrigerated.

DIY Tips:
• Don’t throw away the butter milk! It can be used in many recipes. Try replacing standard milk with butter milk when making your next batch of pancakes. You can also drink butter milk; it’s more easily digestible than whole milk and has less fat.
• It’s very important that you get as much butter milk out as possible because it causes butter to turn rancid.
• For herbed butter, use around 2 tbsp of dried herbs per ½ cup of butter. Try dried basil, parsley, tarragon or crushed rosemary.
